Description

Malabar Biriyani is a luxurious and aromatic variation of the traditional Malabar Biriyani, originating from the Malabar region of Kerala, India. This dish is prepared using the *"dhum" cooking technique, where marinated meat (usually chicken, mutton, or fish) and fragrant **kaima rice* (a short-grain rice variety) are slow-cooked in a sealed pot, allowing the flavors to infuse deeply. The biriyani is rich with coastal influences, featuring coconut oil, curry leaves, and a blend of spices, giving it a unique, earthy aroma. Unlike the mixed-style Malabar Biriyani, the Dhum version is layered, with tender meat and rice cooked separately before being combined and slow-cooked to perfection. Garnished with fried onions, nuts, and raisins, Malabar Dhum Biriyani is a flavorful and indulgent dish that showcases the culinary richness of Kerala.

  • Soak and cook 500g of Jeerakashala rice with salt and whole spices until it's 75% cooked.
  • Add half of the Cookmaid Malabar Biryani in a pan or pressure cooker. Then, add 600g of chicken or fish (or 500g of mutton/buffalo). Add the required amount of water and cook until the meat is done, mix the remaining portion of Cookmaid Malabar Biriyani.
  • Layer the cooked rice over the prepared gravy and garnish with 1 tbsp. of ghee, fried onions, and fresh coriander leaves. Dum cook for 10 minutes and serve hot.
