Description

Originating from the royal kitchens of Lucknow, Awadhi Biriyani is a rich, aromatic, and delicately spiced biriyani, which is typically slow-cooked to develop depth and complexity. It's made with a base of caramelized onions, curd, and ground spices like cardamom, cloves, cinnamon, and mace, creating a mildly spicy yet flavorful sauce. The addition of rose water, and keora water imparts a signature floral fragrance. Often enriched with ghee and finished with a sprinkle of fresh coriander or fried onions, the gravy is luxurious, mildly sweet, and perfectly balanced to enhance the biryani without overpowering it.

  • Soak & cook 500g Basmati rice with salt and whole spices until 75% done.
  • Heat 2-3 tbsp. of oil in a pan or pressure cooker and sauté 600g of chicken or mutton. Add half of the Cookmaid Awadhi Biryani and 200ml of water, then cook until fully done. Mix the remaining portion of Cookmaid Awadhi Biryani.
  • In a heavy-bottomed pan, layer half of the prepared gravy, then half the cooked rice, fried onions, and chopped mint & coriander leaves. Repeat the layering.
  • Cover and cook on low heat for 7-10 minutes or until the rice is fully cooked, and serve hot.

* Add salt if required.
